MarieBelle is the vision of Maribel Leiberman, who uses only Criollo cacao beans because, as she explains, "what the fine Arabica bean is to coffee, the even finer and rarer Criollo bean is to chocolate." Criollo makes up less than 10% of cacao supply and so is so sought after by chocolate connoisseurs. Moreover, it gives chocolate a more complex taste, which can include such flavors as caramel, nuts, and vanilla.
